Spa Weekends and the Comfort of Belgian Cooking

Belgium has hosted 71 Grands Prix since 1950, most of them in the Ardennes, and its kitchen pairs French finesse with generous Flemish cooking.

The Belgian Grand Prix was there on the very first World Championship calendar in 1950, and by 2026 it had been held 71 times. Circuit de Spa Francorchamps, in the province of Liège, has staged 59 of them. Through the 1970s and early 1980s the race went on its travels, twice to Nivelles Baulers and ten times to Circuit Zolder between 1973 and 1984, before Spa became its settled home. Michael Schumacher won there six times, more than any other driver in our records.

Jacky Ickx is Belgium's most successful driver, with eight Grand Prix wins from 116 starts between 1966 and 1979, and Thierry Boutsen added three more from 163 starts. The modern grid carries a Belgian thread as well. Max Verstappen, a four time world champion, was born in Hasselt, and our records give him both Belgian and Dutch nationality. The country even fielded its own national entrant, Ecurie Nationale Belge.

Belgian cooking marries French technique to heartier Flemish fare and changes character from region to region. Cooks prize what is local and in season: potatoes and leeks, gray shrimp, white asparagus, Belgian endive and the country's own beer, along with meat, cheese and butter. The world knows Belgium for chocolate, waffles, fries and beer, and at home the fries are cooked twice, a second chance the crisp bite fully justifies, then handed over from roadside stands in paper cones.

A weekend at Spa puts some of the finest regional food within reach. The forested Ardennes are known for smoked ham and game pâté. Liège lends its name to a famous waffle, to a warm salad of potatoes, green beans and bacon, and to meatballs bathed in a sauce both sweet and sour. Ghent claims waterzooi, and two dishes are often named national favorites: mussels with fries, and a beef stew made with beer in place of wine, which says a good deal about Belgian priorities.
