Ghent creamy chicken and vegetable stew

Chicken poached gently with leeks, carrots and celery, then served in its own broth enriched with cream and egg yolk: the soft spoken, silky stew of the city of Ghent.

Gentse waterzooi

Waterzooi comes from Ghent, the old cloth city of Flanders, and its name points back to the Dutch for boiling water, which is a modest description for something so rich. It began as a fish dish, made with whatever the rivers and canals around the city provided, and when those waters became too polluted to fish, the people of Ghent switched to chicken. Fish waterzooi still exists, but the chicken version is now the one most Belgians mean.

It sits somewhere between a soup and a stew. A whole chicken is poached with herbs and vegetables to make a clear broth, the vegetables are cut into fine strips, and at the end the broth is thickened and enriched with a liaison of cream and egg yolk, so it turns pale, velvety and golden. It is served in deep plates with potatoes and eaten with both a knife and a spoon, a dish of great comfort and no showing off at all.
