Konijn met pruimen

Konijn met pruimen, rabbit with prunes, is one of the great dishes of Flemish home cooking. It began as thrifty food, when a rabbit raised in the back garden was the most affordable meat a family could put on the table, and over the years it has been dressed up into the dish many Flemish families bring out for a celebration. Like the carbonade, it is cooked in beer, but here the beer meets prunes, and the result is darker, sweeter and more aromatic: a sauce with the depth of a good brown ale and the soft sweetness of dried fruit, cut by the salt of the bacon.

Rabbit is lean and mild, somewhere between chicken and veal, and Belgian butchers and supermarkets commonly sell it jointed and ready for the pot. If your butcher looks at you blankly, chicken thighs make a very creditable stand in. Serve it with croquettes or fries in the Belgian way, with plenty of the sauce. It is a dish worth making when the Belgian Grand Prix comes round, whether you are thinking of Spa in the Ardennes or Zolder, the Flemish circuit that hosted the race ten times.
