No Grand Prix Yet, a Mediterranean Table

Israel has never hosted or started a World Championship Grand Prix in our records, and its cooking gathers Jewish diaspora traditions with the Middle East and Mediterranean.

Israel has no World Championship history to speak of yet. No Grand Prix has been held there, and the three drivers our records link to the country, Chanoch Nissany, Roy Nissany and Robert Shwartzman, have no race entries in our data. For now, Israel earns its place on Podium Plates at the table.

Israeli cooking is a meeting of traditions. Much of it arrived with Jewish communities from the diaspora: Sephardi Jews from Iberia, Ashkenazi communities whose roots lie in Eastern and Central Europe, and Middle Eastern Jews from North Africa and Southwest Asia. It has since become a fusion of Jewish and Arab cooking, and many of its popular foods, falafel, hummus and shakshouka among them, are shared with the wider Middle East and Mediterranean, a link that has also drawn criticism from Palestinians and other Arabs over how those dishes are labeled.

Geography shapes the plate. Olives, wheat, chickpeas, dairy, fish, tomatoes, eggplants and zucchini are everyday ingredients, citrus grows on the coastal plain, and mangoes and bananas ripen near the Sea of Galilee. Lunch is usually the main meal of the working day, and salad arrives with almost every meal from breakfast on. The classic chopped salad of tomato and cucumber, dressed with olive oil and lemon, changes from family to family according to where they came from, so there are as many right versions as there are households.

The religious calendar sets much of the menu. Braided challah is baked for the Sabbath and festivals, jelly doughnuts called sufganiyot arrive at Hanukkah, and matza takes the place of bread at Passover. On the street, falafel tucked into pita with pickles and tahini, and shawarma shaved from a turning spit, are everyday favorites, while shakshuka, eggs poached in spicy tomato sauce, is especially loved in winter.
