Jerusalem mixed grill in pita

Chicken thighs, hearts and livers seared fast on a scorching pan with onions, cumin, turmeric and warm spices, then piled into pita with tahini.

Meorav Yerushalmi, the Jerusalem mixed grill, was born around the Mahane Yehuda market, where several grill restaurants still claim to have invented it. The idea is thrifty and brilliant: chicken meat and the parts most cooks overlook, hearts and livers, sometimes spleen and bits of lamb, cut small and seared on a very hot flat griddle with onions and a golden mix of spices. It began as a Jerusalem specialty and is now sold at grill restaurants all over Israel, in pita or laffa or on a plate with salads.

At home, a heavy skillet heated until it practically hums stands in for the restaurant griddle. The cooking takes minutes, so everything is cut and measured first, and the reward is a pan of crisp edged, deeply savory meat that tastes of cumin, turmeric and caramelized onion. It is the dish for a late night after qualifying, when everyone is hungry and nobody wants to wait.

  1. Cut the thighs into strips about 1/2 inch (1 cm) wide and 2 inches (5 cm) long. Trim any fat and tubes from the top of each heart and cut each heart in half lengthwise. Trim any green spots or stringy bits from the livers and cut each into 2 or 3 pieces. Keep the livers in a separate pile, because they go in last. Toss the thighs and hearts with two thirds of the spice mix, and the livers with the rest.
  2. Heat 2 tablespoons of the oil in the skillet over medium high heat. Add the onions and cook, stirring often, for 8 to 10 minutes. Add the garlic for the last minute. Tip onto the large plate.
  3. Wipe the pan out with a paper towel, return it to high heat and leave it empty for 2 minutes. Add 1 tablespoon of the oil.
  4. Add half the thighs and hearts in a single layer. Leave them alone for 2 minutes, then stir and toss for 3 to 4 minutes more. Move them to the plate with the onions and repeat with the rest, adding the last tablespoon of oil if the pan is dry.
  5. Add the livers to the hot pan and cook for 2 to 3 minutes, turning once. If they are already kashered and broiled, they need only 1 to 2 minutes to heat through.
  6. Return the onions, garlic, thighs and hearts to the pan with the livers and toss over high heat for 1 minute, scraping up the browned bits from the bottom. Taste a piece of thigh and add a pinch of salt if needed.

  1. Make this before you start cooking. Whisk the tahini, lemon juice and salt in the small bowl, then whisk in the water a splash at a time.
  2. Warm the pitas for 30 seconds in a dry pan. Open each pocket, spread a spoonful of tahini sauce inside, pile in the hot mixed grill, drizzle with more tahini and scatter with parsley.
