Russian beef and sauerkraut cabbage soup

A slow beef broth soured with sauerkraut, softened with fresh cabbage and potato, rested, then crowned with smetana and dill: Russia's oldest comfort in a bowl.

Shchi

Shchi, cabbage soup, has been the first course on Russian tables for more than a thousand years, eaten by peasants and princes alike. An old saying sums up the national diet as shchi and kasha, cabbage soup and porridge, and few dishes have earned their place so thoroughly. The sour version, made with sauerkraut, is the classic of the long winter: tangy, savory and warming, with soft beef, potato and a spoon of smetana melting into the top.

Russians will tell you that shchi is better the next day, and they are right; the flavors settle and deepen overnight. That makes it ideal for a race weekend, when the soup can be made on Saturday and quietly improve while qualifying is decided. Sochi's Grands Prix were held in early autumn, the start of soup season, and a bowl of this explains why the season is welcomed rather than endured.

The beef broth

  1. Put the beef in the pot with the cold water and bring slowly to a boil over medium high heat. As it comes to the boil, gray foam rises; skim it off with the slotted spoon for about 5 minutes until little more appears.
  2. Add the onion, carrot, celery, peppercorns and salt. Lower the heat until the surface just trembles, partly cover, and simmer for 1 1/2 to 2 hours.
  3. Lift the beef onto a plate. Pour the broth through the sieve into a large bowl, discard the vegetables, and pour the broth back into the pot. Cut the beef into bite size pieces, removing any bone and gristle.

The soup

  1. Bring the broth back to a simmer and add the potatoes. Cook 10 minutes, then add the grated carrot and celery root and cook 10 minutes more.
  2. Meanwhile, heat the oil in the skillet over medium heat and cook the onion for 5 minutes, stirring. Add the sauerkraut, fresh cabbage and tomato paste with 1/2 cup (120 ml) of broth from the pot. Cover and cook over medium low heat for 20 minutes, stirring now and then.
  3. Tip the cabbage into the pot, add the beef and bay leaves, and simmer for 10 minutes. Taste and season with salt and pepper.
  4. Turn off the heat, grate or press in the garlic, stir, cover and leave to rest for 20 minutes. Remove the bay leaves.

  1. Reheat gently if needed and ladle into warm bowls. Add a spoonful of smetana to each and scatter with herbs. Put the rye bread on the table alongside.
