Boiled potatoes, carrots and eggs diced small with pickled cucumbers, sweet peas, cooked sausage or chicken and green onion, bound in mayonnaise: the salad on every Russian holiday table.

Olivier salad began life as a showpiece. In the 1860s Lucien Olivier, a chef of French and Belgian descent, created it at the Hermitage, a grand Moscow restaurant, and kept the recipe so jealously that it became a minor legend. Early published versions read like a list of luxuries: hazel grouse, crayfish tails, capers and olives. Over the following century those were traded for things a home cook could actually find, and the salad that emerged, with potatoes, carrots, eggs, pickles, peas and a mild cooked sausage, became the centerpiece of the New Year's table across the Soviet Union and well beyond.

Today it is home cooking in its purest form: a big bowl made the day before a celebration, guarded from family members with spoons, and eaten for days afterwards. Spain calls its cousin ensaladilla rusa and much of Europe simply calls it Russian salad. The craft is in the knife work, cutting everything into small, even cubes, and in letting it chill so the flavors settle. It is a calm, make ahead dish for a busy race weekend, and it travels to any viewing party without complaint.

The boiled vegetables and eggs

Method

  1. Put the whole potatoes and carrots in the large saucepan, cover with cold water by 1 inch (2.5 cm) and add the salt. Bring to a boil, then simmer gently. Lift out the carrots after 20 to 25 minutes, and the potatoes after 25 to 30 minutes.
  2. Meanwhile, put the eggs in the small saucepan and cover with cold water. Bring to a boil, turn off the heat, cover and leave for 11 minutes. Move them to the bowl of iced water for 10 minutes.
  3. Let the potatoes and carrots cool completely, at least 30 minutes on the counter or longer in the fridge. Peel them with a small knife or the peeler; the skins should rub off easily. Peel the eggs.

Method

  1. Cut the potatoes, carrots, eggs, sausage and pickles into cubes about 1/4 inch (6 mm) across, the size of the peas. Put each into the big mixing bowl as you go. Pat the pickles dry on a paper towel before adding them.
  2. Add the peas, green onions and dill, and season with 1/2 teaspoon salt and plenty of black pepper. Toss gently with the spoon.
  3. Stir the mustard, if using, into the mayonnaise. Add it to the bowl and fold gently with the spoon, lifting from the bottom, until every piece is lightly coated. Taste and add more salt, pepper or mayonnaise. Pile into the serving bowl, smooth the top, cover and refrigerate for at least 1 hour.
