Beef Stroganoff with crisp potato straws

Thin strips of tender beef seared hot and folded into a sauce of soft onions, mustard, a touch of tomato and smetana, served the Russian way with a tangle of crisp fried potato straws.

Beef Stroganoff has traveled so far, and picked up so many mushrooms, cream cans and noodles along the way, that it is worth remembering where it began. The dish carries the name of the Stroganovs, one of the great noble families of imperial Russia, though which Stroganov earned the honor is still argued over. Its first known printed recipe appears in Elena Molokhovets's famous household cookbook of 1871: small pieces of tender beef, sautéed in butter and finished in a sauce of broth, mustard and smetana, the rich Russian sour cream.

Later Russian cooks added onions and a little tomato, and by the early twentieth century it was being served with crisp, fine potato straws, still the classic partner in Russia today. That is the version here. It is a quick dish at heart: the beef needs only a minute or two in a very hot pan, so get everything ready before you start, keep the sauce gentle once the smetana goes in, and the whole thing is on the table faster than a long stint on hard tires.
