Huku yepamusha

In Zimbabwe there is chicken, and there is road runner. Huku yepamusha, the chicken of the homestead, is the free range village bird that scratches around the yard, and almost everyone calls it road runner, a nickname that needs no explaining to anyone who has tried to catch one. It is leaner, firmer and far more flavorful than a farmed broiler, and Zimbabweans prize it above any other bird. For many families it was once kept for Christmas and big occasions,, and it is still the bird people choose when they want the real thing.

Its toughness shapes the method, which is the opposite of what most of us were taught. The bird goes into the pot with salted water and is boiled until tender and the water has almost disappeared; then it fries in its own rendered fat until golden, with garlic and a little paprika, before tomatoes and onions turn the pan juices into a light gravy. Some cooks add no oil at all, trusting the bird to provide. Served with sadza and greens, it is a dish of family gatherings, and one that rewards the cook who is in no hurry, which is a useful temperament on race weekend.
