Quesillo

Venezuelan caramel custard

A dense, creamy custard of whole eggs and condensed milk, riddled with tiny bubbles and crowned with a pool of dark amber caramel.

Quesillo

Quesillo means little cheese, and it contains none. The name comes from its texture: where a classic flan is smooth and silky, a quesillo is denser and full of tiny holes, like a fine fresh cheese, because the whole eggs are blended until airy and the bubbles set in place as it bakes. It is made with sweetened condensed milk, poured over a layer of homemade caramel and cooked gently in a water bath, then turned out so the caramel runs down the sides.

Every Venezuelan birthday table, family lunch and Christmas buffet has one, often next to a ponche crema and a tray of tequeños. It takes five ingredients and one blender, and the turning out is the most dramatic moment of most kitchens' week. Do it with confidence, and preferably with an audience.

Method

  1. Put the sugar and water in the small saucepan over medium heat. Swirl the pan gently, without stirring, until the sugar dissolves, then let it bubble for 8 to 10 minutes, swirling now and then once it starts to color.
  2. Pour the caramel straight into the cake pan. Using oven mitts, tilt the pan so the caramel covers the base and a little way up the sides. Set aside; it will harden and may crackle, which is normal.

  1. Heat the oven to 350°F (180°C) with a rack in the middle. Boil the kettle.
  2. Put the eggs, condensed milk, milk and vanilla in the blender and blend on high for 30 seconds.
  3. Pour the mixture over the hardened caramel. Cover the pan tightly with foil, pressing it around the rim.
  4. Set the cake pan in the roasting pan and put it on the oven rack. Pour boiling water from the kettle into the roasting pan until it comes halfway up the side of the cake pan. Bake for 55 to 65 minutes.
  5. Carefully lift the cake pan out of the water and leave it to cool on the counter for 1 hour. Refrigerate, still covered, for at least 4 hours.
  6. Run the thin knife around the edge, pressing against the pan. Put the serving plate upside down over the pan. Holding them firmly together, flip both over in one quick movement. Lift off the pan; if it sticks, tap the base and wait a minute.
