Cheeseburger

A thick, deeply browned beef patty under a blanket of melted American cheese, on a toasted bun with crisp lettuce, tomato, onion and pickles.

Cheeseburger

The hamburger may have European ancestors, but the cheeseburger is American through and through. Pasadena, California, has a historical marker claiming that in 1924 a sixteen year old cook named Lionel Sternberger dropped a slice of American cheese on a hamburger at his father's sandwich stand, and the country has been doing so ever since. A few other places claim the honor too, which is only fitting for a dish that now belongs to everyone.

A great cheeseburger is a study in contrasts: a hot, juicy, well seasoned patty with a dark crust, cheese melted into every crevice, a soft bun toasted until crisp at the face, and cold, crunchy vegetables. It is the food of diners, ballparks and backyards from Miami to Las Vegas, and the obvious thing to eat on an American race weekend, preferably with both hands.

  1. Slice the tomato and onion and lay them out with the lettuce and pickles on a plate. Stir the mayonnaise and ketchup together in a small bowl for a simple burger sauce; keep the mustard separate.

  1. Divide the beef into 4 equal portions. Shape each gently into a loose ball, then press it into a patty about 3/4 inch (2 cm) thick and 1/2 inch (1 cm) wider than your bun, because it shrinks as it cooks. Press a shallow dimple into the center of each with your thumb, which stops it puffing into a dome. Lay on the parchment and keep cold until cooking.
  2. Just before cooking, sprinkle both sides of each patty generously with the salt and pepper. Salting earlier draws out moisture and makes the meat springy.
  3. Heat the skillet over medium high heat for 3 to 4 minutes, then add the oil and swirl.
  4. Lay the patties in, not touching. Cook without moving or pressing them for 4 minutes.
  5. Turn each patty once and cook 2 minutes. Lay a slice of cheese on each, pour the water into an empty part of the pan and immediately cover with the lid or bowl. Cook 1 to 2 minutes more.
  6. Move the patties to a plate and leave for 2 minutes while you toast the buns.

  1. Spread the cut faces of the buns thinly with the butter. Pour off most of the fat from the skillet, lower the heat to medium and toast the buns cut side down for about 1 minute.
  2. Spread the sauce on the bottom bun. Add lettuce, then the cheeseburger patty, then tomato, onion and pickles. Spread a little mustard on the top bun and close.
