Sticky toffee pudding is a light, dark sponge made with chopped dates, drenched in a sauce of butter, brown sugar and cream, and it is the British pub and restaurant dessert most likely to be ordered by the whole table. It made its name in the 1970s at a country house hotel in the Lake District, though where it truly began is argued over with real feeling, and more than one inn and hotel elsewhere in Britain claims to have served it first. The Lake District, sensibly, has simply kept making it.

The secret of the sponge is the dates. They are soaked in boiling water with a little baking soda, which softens their skins and lets them melt into the batter, so the cake tastes rich and treacly without anyone noticing a single date. The sauce is three ingredients and five minutes. Poured over the sponge while both are warm, it soaks in, and the pudding becomes exactly what its name promised.
