Tiny beef dumplings with garlic yogurt and red pepper butter

Dozens of tiny hand folded dumplings of thin dough and peppery minced beef, boiled and buried under cool garlic yogurt and sizzling red pepper butter, then dusted with dried mint and sumac.

Kayseri mantısı

Mantı traveled to Anatolia with Turkic peoples moving west from Central Asia, and of all the Turkish versions the most famous comes from Kayseri, in the middle of the country. Kayseri mantı are tiny: squares of dough rolled thin, each holding a pinch of minced meat with onion, pinched closed into a little four cornered pouch and boiled. Local pride holds that a properly made spoonful should carry forty of them, a standard that has kept Kayseri's cooks patiently busy for generations.

They are served in a shallow bowl under a thick blanket of garlic yogurt, then drizzled with butter heated with tomato paste and red pepper until it turns brick red, and finished with dried mint and sumac. The folding is slow and quietly companionable work, best done at a table with two or three people talking. We start with squares a little larger than the Kayseri ideal, which still look handsome and halve the time; the forty to a spoon can wait for your second attempt.
