Eggplants stuffed with spiced minced beef

Silky fried eggplants split open and filled with minced beef, onion, peppers and tomato, then baked in a light tomato sauce until meltingly soft.

Karnıyarık

Karnıyarık means split belly, which is exactly what happens to the eggplant: it is fried whole until soft, slit down the middle and filled with minced meat cooked with onion, garlic, green peppers and tomato, then baked with a little sauce. It is one of the great Turkish home dishes, a summer and autumn staple when eggplants are at their best, and a fixture of the lokanta, the everyday restaurants where office workers in Istanbul choose lunch from steaming trays. Its vegetarian sister, imam bayıldı, uses the same shape with an onion and tomato filling.

Istanbul Park sits on the Asian side of the city, and an Istanbul race weekend in a lokanta would almost certainly involve a plate of karnıyarık with rice pilaf and a bowl of yogurt. The frying step is the secret, and we also give a lighter oven method for those who prefer not to fry.

The eggplants

  1. Leave the green tops on. With the peeler, remove strips of skin lengthwise, leaving alternating stripes of purple, about 1/2 inch (1 cm) wide.
  2. Sprinkle with the salt and leave on paper towels for 15 minutes. Pat completely dry.
  3. Heat the oil in the deep skillet over medium high heat until shimmering. Fry the eggplants two at a time, turning with the tongs every couple of minutes, for 8 to 10 minutes in total.
  4. Lay them on paper towels in the baking dish to drain, then remove the towels.

The filling

  1. Heat the oven to 375°F (190°C).
  2. Heat the olive oil in the medium skillet over medium heat. Cook the onion for 6 minutes, then the garlic and peppers for 3 minutes.
  3. Turn the heat to medium high, add the meat and break it up. Cook for 6 to 8 minutes, then stir in both pastes for 1 minute and the tomatoes, salt, pepper and pul biber. Cook 5 minutes more. Stir in the parsley.

  1. With a knife, cut a slit lengthwise down the top of each eggplant, stopping 1 inch (2.5 cm) from each end and not cutting through the bottom. Gently push the sides apart with two spoons to make a pocket.
  2. Spoon the filling into the pockets, mounding it up. Top each with a tomato slice and a pepper.
  3. Whisk the hot water with the tomato paste and salt and pour it into the dish around, not over, the eggplants.
  4. Bake 25 to 30 minutes.
