Fıstıklı baklava

Pistachio filo pastry in syrup

Fıstıklı baklava

Baklava was the pride of the Ottoman palace kitchens in Istanbul, where it was ceremonially presented to the Janissaries during Ramadan, and today the city of Gaziantep in the southeast is its acknowledged capital, famous for its pistachios and its master pastry makers. Antep baklava, with its pistachio filling, is protected as a geographical indication. It is the sweet of every Turkish celebration, given at Bayram, carried to dinners and bought by the tray.

Professional baklava makers stretch their own filo thin enough to read a newspaper through, a skill that takes years. Store bought filo makes a very good home version in about an hour of work, and the only rules that really matter are these: brush every layer with butter, cut before baking, and pour cool syrup over hot pastry.

The syrup

  1. Stir the sugar and water in the medium saucepan over medium heat until the sugar dissolves. Bring to a boil and simmer 10 minutes without stirring.
  2. Stir in the lemon juice, simmer 1 minute more, then take off the heat and cool completely.

Clarified butter

  1. Melt the butter in the small saucepan over low heat and simmer gently for 5 minutes. Skim off the white foam, then carefully pour the clear golden butter into a bowl, leaving the milky solids at the bottom.

Layering and baking

  1. Heat the oven to 350°F (180°C). Pulse the pistachios with the sugar in the food processor until finely chopped but not powdery. Brush the pan with butter. Trim the filo stack to the size of the pan with a sharp knife if needed.
  2. Lay one filo sheet in the pan and brush it lightly but completely with butter. Repeat with half the sheets, brushing every one.
  3. Scatter the pistachios evenly over the filo, pressing lightly.
  4. Layer the remaining sheets on top, buttering each one. Brush the top generously.
  5. With a very sharp knife, cut all the way through to the bottom into diamonds or squares, about 24 pieces. Pour any remaining butter over the cuts.
  6. Bake 45 to 50 minutes.
  7. As soon as the pan comes out, slowly pour the cool syrup evenly over the hot baklava, especially along the cuts. It will sizzle. Sprinkle with the ground pistachios.
  8. Leave uncovered at room temperature for at least 4 hours, ideally overnight, before serving.
