Khao soi gai

Khao soi is the great noodle dish of northern Thailand and the one most closely tied to Chiang Mai, the old capital of the Lanna kingdom. Its roots run along the caravan trails: Chin Haw traders, Chinese Muslims from Yunnan, moved goods through the hills of Burma, Laos and northern Thailand for generations, and the dish they brought is why the classic versions are made with chicken or beef rather than pork. Today it is sold from shophouse stalls all over the city, and the best are still often run by Muslim families.

The broth is a curry, not a soup with curry in it: a paste of dried chilies, shallots, garlic, ginger, turmeric and toasted spices, fried in coconut cream until a brick red oil rises to the surface, then loosened with stock and coconut milk. Two textures of egg noodle go in each bowl, soft ones underneath and a crackling nest of fried ones on top, and the table is laid with sour, sharp and hot things to add to taste. It takes an afternoon of gentle work and rewards it with the kind of bowl people cross a city for.
