Khao niao mamuang

Mango with sweet coconut sticky rice

Chewy sticky rice soaked in warm, sweet and gently salty coconut milk, served with cool ripe mango and a spoonful of thick coconut sauce.

Khao niao mamuang

Khao niao mamuang is sticky rice with mango, and it is the dessert Thailand is happiest to be known for. Glutinous rice is soaked, steamed until chewy and translucent, then stirred while hot into sweetened coconut milk with a pinch of salt, which it drinks up as it rests. It is served at room temperature beside slices of ripe yellow mango, with a little thick, salty coconut cream spooned over the top and a scatter of crisp seeds.

It appears on market stalls and restaurant menus all year but is at its best in the hot months of spring, when Thai mangoes are in season and vendors pile them in golden pyramids. The salt is the quiet genius of the thing: it keeps a very sweet dessert from tasting merely sweet, and makes the second spoonful as interesting as the first.

Sweet coconut sticky rice

  1. Rinse the rice in a bowl of cold water, swirling it with your hand, and pour off the cloudy water. Repeat 3 or 4 times. Cover with cold water by 2 inches (5 cm) and soak for at least 4 hours or overnight.
  2. Pour about 2 inches (5 cm) of water into the large saucepan and bring to a boil. Line the sieve or steamer with damp cheesecloth. Drain the rice and spread it on the cloth in an even layer, set it over the boiling water without touching it, cover tightly and steam over medium heat for 25 to 35 minutes. Halfway through, fold the cloth to flip the rice over, and top up the water with boiling water if low.
  3. While the rice steams, warm the coconut milk, sugar and salt in the small saucepan over medium low heat, stirring, for 2 to 3 minutes until the sugar dissolves. Do not let it boil. Pour it into the heatproof bowl.
  4. Tip the hot rice straight from the steamer into the coconut mixture and fold it in gently with a spoon until every grain is coated. Cover the bowl with a plate and leave for 20 minutes.

  1. Toast the sesame seeds in the dry skillet over medium low heat, shaking the pan, for 2 to 3 minutes, then tip onto a plate.
  2. Rinse out the small saucepan. Warm the coconut milk, sugar and salt in it over medium heat. In the small cup, stir the rice flour into the cold water until smooth, then pour it into the pan, stirring constantly, and bring just to a simmer for 1 minute. Take off the heat.

The mango

  1. Peel the mangoes with the vegetable peeler. Stand each mango on its narrow end and cut down either side of the flat central stone, about 1/4 inch (6 mm) from the center, to remove two thick cheeks. Lay the cheeks flat and slice them crosswise into strips 1/2 inch (1 cm) wide. Trim any remaining flesh from the stone for the cook.
