Zurich style veal in white wine and cream sauce with mushrooms

Thin strips of veal seared fast in butter, then folded through a silky sauce of shallots, mushrooms, white wine and cream, finished with lemon and parsley.

Zürcher Geschnetzeltes

Geschnetzeltes means, quite simply, cut into strips, and the Zurich version, Züri Gschnätzlets in the local dialect, is the city's signature dish: tender veal sliced thin, seared quickly in a very hot pan and bathed in a sauce of white wine, cream and stock, usually with mushrooms. Its classic partner is rösti, the golden Swiss potato cake, and traditional versions sometimes include a little sliced veal kidney, which home cooks outside Switzerland usually leave out without guilt.

It is a dish of speed and confidence rather than long cooking, which makes it ideal for a race weekend: the whole thing comes together in about half an hour. The two rules are to keep the pan hot and the meat moving in small batches, and to return the veal to the sauce only at the last moment so it stays pink and tender. Like a good Swiss timepiece, it rewards precision and forgives very little.
