Tunnbrödsrulle

Every Swedish town has a gatukök, a street kitchen or grill kiosk, and every one of them sells the tunnbrödsrulle. A thin, soft flatbread is spread with mashed potato, loaded with sausages and finished with shrimp salad, mustard, ketchup and onions, then rolled tight and wrapped in paper. Swedish sources credit its invention in the mid 1960s to Elov Bråtfors at his grill in Stuvsta, south of Stockholm, and the country has never looked back.

It looks like an argument between three separate meals, and it is delicious. It is exactly the thing to eat standing beside a fence at a Swedish racetrack in summer, and at home it turns a race party into an event. Hot dogs, mash and a quick shrimp salad are all the work there is.
