Swedish raspberry cordial

Ripe raspberries simmered, strained and sweetened into a ruby red cordial, diluted with cold water or sparkling water: the taste of a Swedish summer.

Hallonsaft

Saft, fruit cordial diluted with water, is one of the great Swedish drinks, made at home from whatever the garden or forest offers: elderflower in June, raspberries and blackcurrants in July and August, lingonberries in autumn. Swedish children grow up on it at every summer party, and adults drink it too, especially at midsummer, when the long light seems to call for something cold and red in a glass.

Hallonsaft, raspberry cordial, is the easiest and among the most loved. A bottle in the fridge turns into dozens of glasses, and it is lovely over ice cream or in a fruit soup. The Swedish Grand Prix at Anderstorp was a June race, very nearly at midsummer, so this is exactly what the picnic baskets around the circuit should contain.
