A coil of coriander scented boerewors off the braai, tucked into a soft roll with a sweet, tangy tomato and onion relish.

Boerewors, farmer's sausage in Afrikaans, is a long, unbroken coil of coarsely minced beef, often with some pork or lamb, seasoned with toasted coriander, nutmeg, cloves and a splash of vinegar. South African regulations require it to be at least 90 percent meat, which tells you how seriously the country takes it. Grilled whole on the braai and cut into lengths, it goes into a soft roll with a sticky tomato and onion relish, and the boerie roll becomes the snack of every rugby match, school fete, charity fundraiser and motor race in the land, Kyalami included.

Outside South Africa, boerewors is sold by specialist butchers and South African shops. If you cannot find it, our variation shapes the same seasoning into skinless sausages at home, which come surprisingly close.

Tomato and onion relish

Method

  1. Heat the oil in the saucepan over medium heat. Add the onions and cook, stirring every few minutes, for 12 minutes. Add the chili and garlic for 1 minute.
  2. Add the tomatoes, sugar, vinegar, salt and pepper. Simmer uncovered over medium low heat, stirring now and then, for 15 to 20 minutes.

  1. Heat the grill to medium: you should be able to hold your hand 5 inches (13 cm) above the grate for 5 to 6 seconds. Or heat the skillet over medium heat.
  2. Lay the coil flat and push two skewers through it in a cross, from edge to edge. This holds the spiral together and lets you turn it in one piece.
  3. Grill the coil for 7 to 9 minutes, then turn it with tongs and the skewers and grill 6 to 8 minutes more. In a skillet, cut the sausage into roll lengths first and cook 12 to 15 minutes, turning often.
  4. Rest the sausage 2 minutes, then remove the skewers and cut it into six lengths the size of the rolls. Warm the split rolls on the edge of the grill for 30 seconds.
  5. Put a length of sausage in each roll and spoon relish along the top. Add mustard or ketchup if you like.
