Warm Cape Malay spiced milk drink with vermicelli and sago

Hot, sweet milk thickened with toasted vermicelli and sago, scented with cinnamon, cardamom and rose water and sipped from a glass or cup.

Boeber

Boeber is the Cape Malay drink of the fifteenth night of Ramadan. Families make it at home, and it used to be served at the mosques after the evening prayers, to mark the middle of the month for those who have kept the first fifteen days of the fast; they are said to be op die berg, on the mountain, with the downhill half still to come. In years gone by, boeber houses sold it at two pence a glass after prayers, and friends would gather there late into the night. The name comes from the Malay bubur, a word for any kind of porridge, which tells you something about its texture.

It sits somewhere between a drink and a pudding: milk simmered with butter toasted vermicelli and pearls of sago until it thickens just enough to coat the spoon, sweetened and perfumed with cinnamon, cardamom and a little rose water. Served hot in a glass, it is comfort of a very old and specific kind, and on a chilly Highveld evening after a race at Kyalami it makes a fine nightcap for anyone not drinking.

Method

  1. Put the sago in the small bowl, cover with the cold water and leave for 15 minutes. Drain it in the sieve just before using.
  2. Melt the butter in the saucepan over medium low heat. Add the vermicelli and stir constantly for 3 to 5 minutes. Watch it closely: it goes from golden to burnt very quickly.
  3. Add the cinnamon sticks, cardamom pods and raisins and stir for 30 seconds in the butter.
  4. Pour in the milk, turn the heat to medium and bring it slowly up to a simmer, stirring every minute or two. Add the drained sago and stir well.
  5. Turn the heat down so the milk barely bubbles and cook for 25 to 30 minutes, stirring often and scraping the bottom so the sago does not stick.
  6. Stir in the sugar or condensed milk, the coconut if using, and 1 teaspoon of rose water. Simmer for 5 minutes more, stirring. Taste and add more rose water or sugar if you like. Fish out the cinnamon sticks and cardamom pods.
