Lime juice with sour plum

Freshly squeezed calamansi lime sweetened with a light syrup and poured over ice, with a salted sour plum sunk in each glass to make every sip sweet, sour and faintly salty at once.

Every hawker centre in Singapore has a drinks stall, and every drinks stall has lime juice. It is made from calamansi, the tiny round citrus that also comes halved on the side of so many hawker plates, squeezed and sweetened and served over a great deal of crushed ice in a tall glass. Ask for it with sour plum and a salted preserved plum goes in too, sometimes two. As you drink, the plum slowly gives up its salt and its dried fruit sourness, so the glass tastes a little different at the bottom than at the top.

It is the obvious partner to anything fried, rich or hot, which in a hawker centre covers most of the menu, and it is the drink many Singaporeans reach for on a sweltering afternoon. The salt is not a quirk; like a pinch of salt in a sports drink, it makes the cold sweetness taste brighter and more refreshing.

The whole thing takes ten minutes and very little equipment. On a humid race weekend at Marina Bay it would outsell anything with bubbles in it, and it does not mind being made by the jug.
