Date and cardamom filled whole wheat cookies

Crumbly whole wheat cookies scented with cardamom and dried lime, wrapped around a sticky date filling, stamped with a pattern and baked golden: the pride of Qassim.

Kleija

Kleija is the sweet of Qassim, the farming region north of Riyadh famous for its dates, and in 2024 the Saudi Culinary Arts Commission named it Qassim's regional dish. Whole wheat dough rich with ghee is flavored with cardamom, cinnamon, ginger and a little ground dried lime, then filled, often with dates or with sugar and spices, and baked until crisp at the edges and tender inside. The city of Buraidah holds a festival in its honor, and families make them in large batches for holidays and for guests, to be eaten with Saudi coffee.

They keep well for a week, travel well, and are easy for a beginner: the dough is forgiving, and the shaping is just wrapping dough around a little ball of filling and pressing a pattern on top. Serve them with gahwa at the end of the race, as a Saudi host would.

Method

  1. Stir both flours, sugar, baking powder, spices and salt together in the large bowl.
  2. Pour in the ghee and rub it into the flour with your fingertips for 2 minutes.
  3. Add the warm milk and knead lightly in the bowl for 2 minutes, adding a little more milk if crumbly. Cover and rest 30 minutes.

  1. Warm the date paste, ghee, cardamom and cinnamon in the small saucepan over low heat, mashing with a fork, for 2 to 3 minutes. Or pulse dates with the other ingredients in the food processor.
  2. Heat the oven to 350°F (180°C).
  3. Divide the dough into 24 equal pieces, about 1 oz (27 g) each, and roll each into a smooth ball between your palms. Keep them under a clean towel. Divide the filling into 24 small balls, about 2 level teaspoons each.
  4. Flatten a dough ball in your palm into a round about 3 inches (8 cm) across. Set a ball of filling in the middle, bring the edges of the dough up over it and pinch them together to seal, then roll it gently between your palms. Repeat with the rest.
  5. Set the balls seam side down on the sheets, 12 to a sheet, and press each with your palm into a round about 2 1/2 inches (6 cm) across and 1/2 inch (1 cm) thick. Press a crisscross pattern into the top with the tines of a fork, or use a cookie stamp. Brush with the yolk glaze and sprinkle with sesame.
  6. Bake one sheet at a time for 18 to 20 minutes.
  7. Cool on the sheet for 5 minutes, then on the rack.
