Ridged egg pasta with Romagna meat sauce

Ridged tubes of egg pasta from Imola itself, tossed with a slow cooked Romagna ragù of beef and pork and a snowfall of parmesan.

Garganelli al ragù

Every San Marino Grand Prix was held at Imola, and Imola has its own pasta. Garganelli are small squares of egg pasta rolled around a stick and pressed over a weaver's comb, so that each tube is ridged on the outside and holds sauce in every groove. The town tells two stories of their invention, one involving the Renaissance countess Caterina Sforza and another set in a cardinal's kitchen in the eighteenth century, and in 2019 the city gave the garganello its own municipal designation. It is the right dish to remember a race named for one country and run in another.

The classic partner is ragù, slow cooked meat sauce of the Romagna type: beef and pork simmered gently with a little tomato, wine and milk until rich and tender. Handmade garganelli are a lovely project, but good dried egg garganelli are widely available and make this a dish any beginner can master.

Method

  1. Heat the oil and butter in the heavy saucepan over medium heat. Add the pancetta and cook for 3 minutes.
  2. Add the onion, carrot and celery and cook gently, stirring often, for 10 to 12 minutes.
  3. Turn the heat to medium high. Add the beef and pork and break them up with the spoon into small crumbs. Cook, stirring, for 8 to 10 minutes.
  4. Pour in the wine and let it bubble, stirring, for 2 to 3 minutes.
  5. Stir in the tomato paste for 1 minute, then the passata, stock, salt and pepper. Bring to a bubble.
  6. Turn the heat to the lowest setting, partly cover and simmer for 2 hours, stirring every 15 to 20 minutes. Add a splash of stock or water whenever it looks dry.
  7. Stir in the milk and simmer 15 minutes more. Taste for salt.

  1. Bring the large pot of water to a rolling boil and add the salt. Add the garganelli, stir, and cook for 1 minute less than the time on the packet. Scoop out a mug of the cooking water, then drain.
  2. Tip the pasta into the pan of ragù over low heat with half the cheese and a splash of the cooking water. Toss with the spoon for 1 minute.
