Cacciatello

Cacciatello, also called casatello, is one of the old farmhouse sweets of San Marino: eggs, sugar and whole milk, perfumed with lemon peel, cinnamon and cloves tied up in a little cloth bag, then poured into a pan lined with a thin sheet of flour and water dough and baked very slowly. Accounts from the republic describe it as a winter sweet, made at home when hens and cows supplied the ingredients and the oven was already warm, and handed down in families rather than written in books.

It is often compared to crème caramel, but the crust gives it a character of its own, crisp at the rim and soft where it meets the custard. The method asks for patience rather than skill: a low oven and a little faith that a custard which still trembles in the middle will set as it cools. That makes it an ideal sweet to bake while the race builds toward its final stint.
