Țuică fiartă

Țuică is the spirit Romania calls its own: a clear brandy distilled only from plums, made in huge quantities by families in the hills of the south and east, and poured in a small glass before a meal to sharpen the appetite and welcome a guest. It turns up at weddings, christenings, harvest festivals and religious holidays, and in rural Romania it is the usual drink for a toast, rather than wine. Most of the year it is sipped cool. In winter, it is also drunk hot.

Țuică fiartă, literally boiled țuică, although it must never actually boil, is the cold weather version: the brandy warmed with sugar, a few black peppercorns and spices, sometimes with lemon peel, until the kitchen smells of plums and cinnamon. Melting the sugar to a light caramel first gives it a rounder, toffee note. It is strong, sweet and peppery, served in small cups rather than mugs, and best taken slowly, advice that applies equally to the drink and to the first corner.
