Moldavian pork and sausage pan stew

Cubes of pork and smoked sausage cooked slowly in their own juices with wine and garlic, crowned with a fried egg, salty cheese and golden mămăligă.

Tochitură moldovenească

Tochitură is a lesson in patience disguised as a pan of meat: small cubes of pork cooked slowly in their own fat and juices, traditionally in a cast iron pot, until they are tender and glossy. The Moldavian version, from the hilly northeast of Romania around Iași, adds smoked sausage, a splash of wine and a great deal of garlic, and then it is served with a theatrical flourish: a mound of mămăligă, a fried egg with a runny yolk, and a shower of grated salty sheep's cheese.

It is the kind of dish that country inns across Romania serve to people who have spent the day outdoors, and it asks very little of the cook beyond patience. Whatever the day has involved, a plate of tochitură suggests that it ended well.

The tochitură

Method

  1. Heat the lard in the heavy pot over medium high heat. Season the pork with the salt and pepper and add it to the pot in one layer. Leave it alone for 3 minutes, then stir and keep cooking for 8 to 10 minutes in all.
  2. Add the sausage slices and cook for 3 minutes, stirring.
  3. Pour in the wine and let it bubble for 2 minutes, scraping the bottom of the pot with the wooden spoon to lift the browned bits.
  4. Stir in the paprikas, thyme, bay leaves and tomato paste, then the hot water. Cover, turn the heat to low and simmer gently for 50 to 60 minutes, stirring every 15 minutes and adding a splash of water if it looks dry.
  5. Stir in the garlic and simmer uncovered for 5 more minutes. Remove the bay leaves and stir in the parsley.

Mămăligă

Method

  1. Bring the water and salt to a boil in the saucepan. Lower the heat to medium low and pour in the cornmeal in a thin stream, whisking constantly so no lumps form. Stand back a little; it spits.
  2. Switch to the wooden spoon and cook for 25 to 30 minutes, stirring every few minutes and scraping the bottom. Stir in the butter.

  1. Heat the oil in the nonstick skillet over medium heat. Crack in the eggs and fry for 3 to 4 minutes, until the whites are set but the yolks are still soft. For firm yolks, cover the pan for the last minute.
  2. Put a mound of mămăligă on each plate. Spoon the tochitură beside it, lay a fried egg on top, and scatter generously with the cheese.
