Langoși

Fried flatbreads with sour cream and cheese

Puffy, blistered fried dough the size of a plate, brushed with garlic, spread with sour cream and buried in grated cheese.

Langoși

Langoș came to Romania with the Hungarian communities of Transylvania, and has since been adopted by everybody. It is a soft yeast dough stretched by hand into a rough disc, fried until it puffs and blisters, and then dressed while hot: a brush of garlic water, a layer of sour cream, a snowfall of grated cheese. You find it at village markets, fairs, bus stations and beaches, usually from a small window with a long line in front of it.

It is cheap, it is enormous and it is meant to be eaten standing up, folded in half, with the sour cream heading for your sleeve. In short, it is festival food of the highest order, and the perfect thing for a crowd that has spent the afternoon outdoors cheering.

The dough

  1. Stir the flour, yeast, sugar and salt together in the bowl. Pour in the warm milk, water and oil and stir with a spoon until a soft, shaggy dough forms.
  2. Knead in the bowl or on a lightly floured counter for 8 to 10 minutes: push the dough away with the heel of your hand, fold it back, turn it a quarter turn and repeat. Keep it soft; add only a sprinkle of flour if it sticks badly.
  3. Shape into a ball, return it to the bowl, cover with the towel and leave in a warm spot for 45 to 60 minutes.
  4. Turn the dough out and cut it into 6 equal pieces. Oil your hands and roll each into a ball. Cover with the towel and rest for 15 minutes.

  1. Stir the crushed garlic into the water in the small bowl and leave it to infuse while you fry.

Frying and dressing

  1. Pour the oil into the skillet to a depth of 1 1/2 inches (4 cm), leaving at least 1 1/2 inches (4 cm) of space above it. Clip on the thermometer and heat over medium heat to 350°F (175°C).
  2. Oil your hands. Take a dough ball and stretch it gently from the center outward, turning it as you go, into a disc about 8 inches (20 cm) across, thin in the middle with a slightly thicker rim. A few thin spots are fine; holes are not.
  3. Lay the disc carefully into the oil, laying it away from you so any splash goes away from you. Fry for 1 to 2 minutes, then turn with two spatulas and fry 1 to 2 minutes more.
  4. Lift onto the paper towels for 30 seconds, then onto a plate. At once, brush with garlic water, spread with a few spoonfuls of sour cream, and scatter thickly with grated cheese, a little telemea and dill. Repeat with the rest, letting the oil return to 350°F (175°C) between each.
