Plenty of Romanians, and a good many visitors, would name ciorbă de burtă the finest soup in the country. Beef tripe, which sounds alarming and tastes wonderfully mild, is simmered for hours with bones and root vegetables until meltingly tender, then cut into thin ribbons and returned to a broth thickened with egg yolks and rich sour cream. Vinegar gives it its sour edge, and each diner finishes their own bowl at the table with more sour cream, a spoonful of mujdei, the fierce Romanian garlic sauce, and a bite of fresh hot pepper between spoonfuls.

The result is a study in contrasts: sour and gently sweet, hot and velvety, rich and somehow delicate. The Romanian journalist and cookery writer Radu Anton Roman praised it for exactly that. It is eaten at holidays and family celebrations and, famously, in the small hours after a long party, when its restorative powers are said to be considerable. It needs a patient afternoon on the stove, and it rewards the effort as generously as a well judged one stop strategy.
