Thareed

Thareed is one of the oldest dishes in Arabia, bread soaked in a meaty broth, and across Qatar and its Gulf neighbors it is the dish that appears on the iftar table to break the fast in Ramadan, gentle enough for an empty stomach and generous enough for a crowd. Before Ramadan, families traditionally share it with their neighbors. The stew is mild and fragrant, sour with dried lime and sweet with slow cooked vegetables.

The bread is the heart of it: thin regag or flatbread layered in a wide dish so it softens in the broth while the edges keep a little bite. It is a dish for patient cooks and hungry tables, which is to say it is made for the last races of the season.
