Haleeb bil zanjabeel

Haleeb bil zanjabeel simply means milk with ginger, and it is one of the traditional drinks of Qatari homes, listed with Arabic coffee, red tea and karak among the country's own. It is a winter drink, made for the evenings when the desert air turns surprisingly cold, and the kind of cup anyone would want when they feel in need of looking after.

Zanjabeel, the Arabic word for ginger, carries a certain prestige: it is named in the Quran as one of the flavors of the drinks of paradise. In the cup it is more down to earth, fiery at the back of the throat, mellowed by milk and honey, and lifted by cardamom and a little saffron, which turns the drink a pale, buttery gold.

It takes fifteen minutes and one small trick, boiling the ginger in water before the milk goes in, which stops it curdling. Qatar's race runs under floodlights after dark, and a glass of this is the right companion for the late laps.
