Arroz doce means simply sweet rice, which undersells it in the way the Portuguese tend to undersell the things they love most. It is the pudding of Christmas tables, weddings, village festas and large family lunches, carried in on wide shallow platters and decorated on top with ground cinnamon pinched between the fingers into lattices, swirls and patterns that every family considers its own. What sets it apart from the rice puddings of its neighbors is the egg yolk stirred in at the end, which turns it the color of pale butter and gives it a softness closer to custard.

The method asks for patience rather than skill. The rice is first cooked in water with lemon peel and a cinnamon stick, then fed warm milk a ladle at a time and stirred until each grain is tender and the pot looks creamy. It sets as it cools, so it is equally good warm from the stove or cold from the fridge, and it is one of the few desserts that can be finished well before qualifying and forgotten about until the podium.
