Polish hot spiced beer with honey, orange and a silky egg yolk finish

When Polish winters set in, mulled wine has a rival. Grzane piwo, warmed beer, is a winter favorite for festive gatherings and bonfires in snowy woods: a light or dark beer heated slowly with honey, a squeeze of orange, a few cloves, a piece of cinnamon and slices of fresh ginger. It comes to the table steaming in a glass mug and smells like gingerbread with ambitions.

The old fashioned and more luxurious way, which this recipe follows, finishes it with egg yolks whisked with sugar, stirred into the hot beer so that it turns pale gold, silky and gently creamy, a reminder of the rich beer based dishes once made in wealthier Polish households. Many people simply skip the yolks for a clearer, lighter drink; both are correct, and both are given here.

The trick is gentle heat. Boil the beer and the alcohol and the hop aroma vanish, leaving something bitter; warm it just to steaming and it is soft, spiced and very comforting, which on a cold race evening is exactly the point.
