Roast lamb, sweet potatoes and mint sauce

For most of the twentieth century New Zealand was, in round numbers, a country of a few million people and tens of millions of sheep, and the Sunday roast leg of lamb became something close to a national rite. It comes out for Christmas, for Easter, for visiting relatives and for any Sunday that seems to deserve it. The roast vegetables almost always include kūmara, the sweet potato the Māori brought from Polynesia, which caramelizes in the lamb fat into something better than any vegetable has a right to be.

Mint sauce, sharp with vinegar and sweetened just enough, cuts through the richness of the meat. It is a generous, unhurried meal for a race weekend, and a fitting toast to the country that gave Formula 1 Bruce McLaren, Denny Hulme and a team name still on the grid.

The lamb

Method

  1. Heat the oven to 425°F (220°C) with a rack in the lower middle.
  2. Pat the lamb dry with paper towels. With the small knife, make about 16 cuts, each about 3/4 inch (2 cm) deep, all over the top and sides. Push a garlic sliver and a tuft of rosemary into each cut.
  3. In the small bowl mix the oil, mustard, chopped garlic, chopped rosemary, salt and pepper. Rub it all over the lamb with your hands, then wash your hands.
  4. Set the lamb in the roasting pan and roast for 20 minutes. Turn the oven down to 350°F (180°C) and add the kūmara to the pan (see below). Roast for 60 to 75 minutes more.
  5. Lift the lamb onto the carving board, cover loosely with foil and rest for 20 minutes. Keep the kūmara roasting meanwhile.

  1. Toss the kūmara and onion with the oil and salt in a bowl. When you turn the oven down, tip them around the lamb in the pan and turn them in the fat that has run out.
  2. Turn the vegetables with tongs halfway through. While the lamb rests, turn the oven back up to 425°F (220°C) for 10 to 15 minutes to crisp them.

The mint sauce

Method

  1. Stir the sugar and salt into the boiling water in a small heatproof bowl until dissolved.
  2. Add the chopped mint and vinegar, stir, and leave for at least 30 minutes. Taste: add a little more sugar if very sharp.
