New Zealanders have an entire category of baking called slices, traybakes cut into squares and kept in tins for visitors, and ginger crunch is arguably the queen of them. It is two layers and nothing more: a pale, crumbly shortbread warmed with ground ginger, and on top a soft, fudgy icing of butter, golden syrup, powdered sugar and a great deal more ginger, poured on while the base is still warm so the two fuse together.

It has been handed down through New Zealand family recipe books for generations, and every family has a view on the icing, which is usually that the last person to make it was too stingy with it. The correct answer, in our view, is that the icing should be roughly as thick as the base. Some bakers fold oats or coconut into the base or scatter chopped crystallized ginger over the top; the classic is gloriously plain.

It is also one of the easiest bakes we know. There is no mixer, no rising and no decorating, and a tray made the day before keeps beautifully in a tin, which leaves a race weekend free for the race.
