Ask a New Zealander to name the country's classic home baking and the Afghan will be near the top of the list, somewhere between the Anzac biscuit and the argument about who invented the pavlova. It is a dark, buttery chocolate biscuit, made with plenty of butter, not much sugar, no raising agent at all, and a generous handful of cornflakes, which give it a crunch you do not expect from something so soft and rich. Each one is topped with chocolate icing and half a walnut. It has been a fixture of New Zealand home baking books and bakery counters for generations.

Where the name came from, nobody knows for sure. There are several theories and no proof, so we will leave it there. What is certain is that the low sugar in the biscuit and the sweetness of the icing balance each other perfectly, and that the cornflakes must be folded in gently, or the crunch is lost.

They keep well in a tin, travel without breaking and are just the thing to hand round when a race is broadcast to New Zealand in the small hours, as it so often is.
