Kale mashed potatoes with smoked sausage

Buttery potatoes mashed with curly kale, crowned with smoked sausage and a pool of gravy: the Dutch answer to wind, rain and any other weather.

Boerenkoolstamppot

Stamppot simply means mashed pot, and it is the backbone of Dutch home cooking: potatoes boiled and mashed together with a vegetable, served with a sausage or slow cooked meat and a little lake of gravy in the middle. Boerenkool, farmer's kale, is the best loved version. The kale is cooked on top of the potatoes in one pot, the smoked sausage warms alongside, and the whole thing is mashed with butter and milk until it is rough, green flecked and very comforting.

It is winter food in the Netherlands, eaten when the first frosts have sweetened the kale. Zandvoort's race usually falls at the end of summer, but anyone who has stood in the dunes when the North Sea wind picks up will understand why a bowl of stamppot never feels out of season there.

The stamppot and sausage

Ingredients

Method

  1. Put the potatoes in the large pot with the salt and just enough cold water to cover them. Bring to a boil over high heat, then turn the heat down so it simmers steadily.
  2. After 10 minutes, pile the chopped kale on top of the potatoes. It will look like far too much. Lay the sausage on top of the kale, put the lid on, and simmer for another 15 to 20 minutes.
  3. While the pot simmers, put the bacon strips in a cold dry skillet, set over medium heat and cook for 6 to 8 minutes, stirring now and then. Lift them onto a paper towel.
  4. Lift out the sausage and keep it warm on a plate covered with foil. Tip the potatoes and kale into the colander, let them steam for 2 minutes, then return them to the empty pot.
  5. Add the butter, pepper and nutmeg and mash firmly. Add the warm milk a little at a time, mashing as you go, then stir in the bacon. Taste and add salt.

  1. Melt the butter in the small saucepan over medium heat. Whisk in the flour and cook, whisking, for 2 minutes. Pour in the stock slowly, whisking all the time, add the soy or Worcestershire sauce and simmer for 3 minutes.
