Avocado in a milkshake surprises most visitors to Morocco for exactly one sip. In the country's juice bars and mahlaba, the small milk and snack bars found on busy streets, avocado blended with cold milk and a little sugar is a fixture of the menu, and during Ramadan it is one of the favorite things to drink when the fast is broken in the evening. Zaazaa is its most extravagant form: the avocado shake thickened with dates and almonds and built up in a tall glass with layers of chopped fruit, honey and nuts, often crowned with cream.

It sits somewhere between a drink and a pudding, which is no criticism. The avocado gives it a velvety body without tasting of salad, the dates sweeten it naturally, and the almonds bring back the flavor of the older Moroccan almond milk drinks. This home version keeps the spirit and skips the candy and cookie garnishes that some bars pile on top, though nobody will stop you.
