Toasted almond, argan oil and honey spread from the Souss

Deeply toasted almonds ground smooth and loosened with roasted argan oil and honey into a glossy, pourable spread, nutty and faintly bitter against the sweetness: the breakfast treasure of southwest Morocco.

Amlou

Amlou comes from the Souss, the region of southwest Morocco around Agadir and Taroudant where the argan tree grows and almond trees thrive alongside it. It was created by the Shilha, the Amazigh people of the region, in whose kitchens argan oil plays the part that olive oil plays elsewhere in North Africa. The recipe is three ingredients and a great deal of patience: almonds toasted until dark, crushed and kneaded with roasted argan oil and honey until the paste turns glossy and loose.

Think of it as almond butter that has been somewhere interesting. Roasted argan oil gives a toasty, slightly bitter depth that no other oil quite matches, and it keeps the honey from tipping the whole thing into confectionery. It is served at breakfast and with afternoon tea, swept up with warm bread, msemen or soft pancakes, and offered to guests as a sign of welcome. A food processor does the crushing without complaint, and a jar in the fridge makes every breakfast of a race weekend feel like an occasion.
