Monaco's pastry shops have plenty of grand creations, but the dessert that seems to belong most completely to this stretch of coast is the plainest: a tarte au citron. Lemons have grown on these terraced hillsides for centuries, and Menton, a few minutes east of Monaco, is so devoted to them that it throws a lemon festival every February, with sculptures built from the fruit. Its lemons are prized for their perfume and gentle acidity, and the best tarts of the region are made with them.

The tart itself is beautifully simple: a thin, crumbly sweet pastry, baked crisp, and a lemon cream cooked on the stove until thick, then enriched with butter so it sets as smooth as satin. Some pastry chefs crown it with toasted meringue; others leave it bare, all sharp yellow shine. Either way it is a dessert made for early summer, cool and bright after a long afternoon in the sun, and it slices beautifully for a crowd on race weekend.
