Rougets à la niçoise

Red mullet is the jewel of the Mediterranean fish market, small, rose pink and sweet fleshed, and along the coast from Nice to Monaco it is cooked à la niçoise. The fish is floured and seared quickly in olive oil, laid in a dish under a fresh tomato sauce, then topped with thin slices of lemon, anchovy fillets, black olives and capers, and finished gently in the oven. It is a plate of the region's greatest hits, and it takes about as long to make as a pit stop window lasts.

Red mullet can be hard to find outside the Mediterranean, but the dish is generous about substitutes: any small, firm, sweet white fish with its skin on, from red snapper to sea bream, does beautifully. The sauce can be made ahead, the fish cooks in under 20 minutes, and the result looks as if a great deal more effort was involved, which, on a Monaco race weekend, is very much the local style.
