Michelada

In Mexico, a beer is often improved before it is drunk. A cerveza preparada, or prepared beer, can be as simple as lime and salt or as elaborate as a glass of fruit, chili and sauces, and the michelada is the most famous of the family. The popular story credits Michel Ésper, a member of a sports club in San Luis Potosí, who took to ordering his beer with lime, salt, ice and a straw, and soon had other members asking for Michel's lemonade. Others insist the name is simply mi chela helada, my ice cold beer, chela being Mexican slang for a beer. Both stories end at the same bar.

Every region and every bartender has a version. Some keep it to lime, salt and chili; others add hot sauce, Worcestershire and a dark seasoning sauce; still others pour in tomato juice, fruit juices or tangy chamoy. This is a classic, lime forward version, savory and sharp and quite capable of cooling down a hot afternoon in the grandstands, with a version for those not drinking alcohol that is just as refreshing.
