Iced rose syrup milk

A homemade rose syrup stirred into creamy evaporated milk and poured over plenty of ice: a pale pink, gently floral cooler served by the jugful across Malaysia.

Sirap bandung

Sirap bandung is the drink Malaysia pours when there is a crowd to look after. Rose flavored syrup is mixed with evaporated or condensed milk and plenty of ice, and the result is a soft, milky pink, sweet and fragrant, cold enough to fog the glass. The name has nothing to do with the Indonesian city: bandung means pairs, or mixed together, and sirap simply means syrup. It turns up in big jugs at weddings and family gatherings, at the night markets, and above all at the breaking of the fast during Ramadan, when the bazaars are lined with it.

It is also one of the easiest drinks in this book. Store bought rose syrup is perfectly traditional, but a homemade syrup takes ten minutes and lets you decide exactly how pink and how perfumed it should be. In the heat and humidity of a Sepang race weekend, a cold glass of bandung in the grandstand would have been rather more welcome than another bottle of warm water.

Method

  1. Put the sugar and water in the small saucepan over medium heat and stir until the sugar has completely dissolved. Bring it to a boil, then lower the heat and simmer for 3 minutes without stirring.
  2. Take the pan off the heat and let it cool for 10 minutes, so the heat does not drive off the rose scent. Stir in the food coloring a drop at a time, then the rose water. Taste a drop on a spoon and add a little more rose water if you want it more fragrant.
  3. Pour the syrup into the clean bottle or jar, close it and let it cool completely, then chill it in the fridge.

  1. Pour the rose syrup, condensed milk and cold water into the jug and stir until the condensed milk has dissolved completely, with no thick streaks at the bottom.
  2. Pour in the evaporated milk and stir well. Taste and add a spoonful more syrup if you want it sweeter or pinker.
  3. Fill the tall glasses to the top with ice and pour the bandung over it. Stir each glass once so the drink is properly cold before serving.
