Kuih seri muka

Kuih are Malaysia's little cakes, and the glass counters of morning markets and coffee shops are lined with them in every color a pandan leaf or a palm sugar can produce. Seri muka is one of the most loved: a base of glutinous rice steamed with coconut milk, pressed firm, and topped with a silky custard of eggs, coconut milk and fresh pandan juice, steamed until it sets to a smooth, pale green. It belongs to the Nyonya kitchen, the Peranakan cooking that grew from Chinese and Malay families meeting over centuries in the old ports of the straits.

The name is usually translated as radiant face, a nod to that glossy, unblemished green top, which is also how a cook's skill is judged. A gentle steam and a towel under the lid are the secrets, and both are easy. It is the right sweet for a hot race weekend: made ahead, served at room temperature, and only modestly sweet, so a second square feels entirely reasonable.
