Satay ayam

Grilled chicken skewers with peanut sauce

Skewers of chicken marinated in lemongrass and turmeric, grilled until charred at the edges and dipped in a rich, sweet and spicy peanut sauce.

Satay ayam

Satay is Malaysia's great grill snack: small pieces of marinated meat on thin bamboo skewers, cooked over charcoal and eaten by the dozen with a thick peanut sauce, chunks of cucumber and raw onion, and compressed rice cakes called ketupat. The town of Kajang in Selangor, about half an hour from Sepang, made its name on satay, and Kajang style, with generous pieces of meat and a richly spiced sauce, is now served all over the country.

There is no better match for a race weekend in Selangor: smoke rising from a long grill, skewers ordered by the ten and sauce by the bowl. At home a grill, grill pan or oven broiler does the job, and the marinade does most of the work while you watch practice.

The chicken and marinade

Method

  1. Blend the lemongrass, shallots, garlic, galangal and ginger with the oil to a smooth paste. Stir in the turmeric, coriander, cumin, fennel, sugar and salt.
  2. Toss the chicken pieces with the paste in the large bowl until every piece is coated. Cover and refrigerate for at least 2 hours, or overnight.
  3. Thread 4 or 5 pieces onto each soaked skewer, pushing them close together and leaving 2 inches (5 cm) of bare stick at the bottom to hold.
  4. Heat the grill or broiler to high. Grill the skewers for 8 to 10 minutes, turning every 2 minutes and brushing them with a little oil each time you turn. In Kajang a bunch of lemongrass is used as the basting brush; try it.

The peanut sauce

  1. Pulse the peanuts in the food processor until coarsely ground, like coarse sand with a few small chunks. Tip them out.
  2. Blend the drained chilies, shallots, garlic and lemongrass with 2 tablespoons water until smooth. Heat the oil in the saucepan over medium heat and fry the paste for 8 to 10 minutes, stirring often.
  3. Add the ground peanuts, tamarind juice, water, sugar and salt. Simmer over low heat for 10 to 15 minutes, stirring often so it does not catch, until thick.

  1. Arrange the cucumber, onion and rice cubes on a platter beside the skewers and bowls of warm peanut sauce.
