Pork pie with Riesling jelly, served cold in slices

A golden loaf of buttery pastry wrapped around a herby pork filling marinated in Riesling, its gaps filled with a clear, wine scented jelly, chilled and served cold in thick slices.

Rieslingspaschtéit

Luxembourg's butchers and caterers have long made it: a long golden loaf of pastry with a couple of little chimneys in the lid, sold by the slice and eaten cold. Inside is a well seasoned pork filling, marinated in the dry Riesling of the Moselle, and around it, filling every gap left as the meat shrinks in the oven, a layer of clear jelly made with more of the same wine. It turns up at buffets, receptions and family parties, sliced thick and eaten with a fork, or with fingers when nobody is looking.

It is a project rather than a weeknight dish, with a marinade, a pastry, a long bake and a night in the fridge, but none of the steps is hard and the payoff is a showpiece that feeds a crowd for days. It is also, by design, picnic food: cold, sliceable and sturdy, the kind of thing you can unwrap on a grandstand seat during a long stint and feel very pleased with your planning.
