Homemade Luxembourg honey liqueur

Local fruit brandy softened with golden honey, a strip of lemon and a few gentle herbs, rested for two weeks into a smooth, warming after dinner sip, served cold over ice.

Hunnegdrëpp

In Luxembourg a drëpp is a shot of local eau de vie, and the country distills plenty of them, mostly from its plums and mirabelles. Hunnegdrëpp is the gentler member of the family: fruit or grain brandy blended with Luxembourg honey and, usually, a few herbs, so that it lands somewhere between a spirit and a liqueur. Beekeepers and small distillers make their own versions, each to a house recipe, and it is poured at the end of a long meal as a digestif, or now and then before one as an aperitif.

The home version below follows the same idea. A good, clean fruit brandy is mellowed with honey dissolved in a little warm water, given a breath of lemon peel and herbs, then left in a dark cupboard for two weeks to round off. The honey you choose decides the character: acacia is light and floral, forest honey dark and resinous. It is a fine thing to have on the shelf for the evening after a long race, when the podium interviews are over and the arguments about strategy are not.
