Hong am Rèisleck

Chicken braised in Moselle Riesling with mushrooms and cream

Chicken pieces browned in butter, then simmered in dry Moselle Riesling with shallots, garlic and mushrooms, the sauce finished with cream into something pale gold, silky and gently tart. Served over buttered noodles.

Luxembourg's slice of the Moselle valley makes crisp, dry white wines, and its cooks have never been shy about putting them in the pot. Hong am Rèisleck, chicken in Riesling, is the best loved of these wine dishes: chicken browned in butter, simmered with shallots, mushrooms and a good part of a bottle of Riesling, then finished with cream. It is often described as Luxembourg's version of coq au vin, close kin to the coq au Riesling of neighboring Alsace, with white wine where Burgundy would use red.

What makes it special is balance. Riesling brings acidity and a faint fruitiness, the cream rounds it off, and the mushrooms give it an earthy base, so the sauce is rich without being heavy. Use a wine you would happily drink, because you will be drinking the rest of the bottle with it. It is a good dish for a long race: once it is in the pot, it asks only for an occasional stir.
