Butter toasted cornmeal crumbles with apple compote

Cornmeal soaked in milk, then slowly toasted in butter into golden, nutty crumbles and served with warm apple compote: the Rhine valley's oldest comfort.

Ribel

Ribel is what the Alpine Rhine valley made of its corn for centuries, and it is still made the same way in Liechtenstein, St. Gallen and Vorarlberg. Cornmeal is scalded with salted milk and water, left to swell for a few hours, then stirred in a wide pan with butter until it breaks into small, crisp edged, golden crumbles. The local heritage corn, Rheintaler Ribelmais, is ground with its germ and tastes notably nutty; it now carries protected origin status, the only Swiss cereal product to do so. Ordinary cornmeal makes a very good version at home.

It was once breakfast, eaten with a sprinkle of sugar and dipped by the spoonful into a large bowl of milky coffee, and it turns up at Liechtenstein's national day festival alongside Käsknöpfle. Today it is just as likely to be lunch or supper with apple, plum or elderberry compote. It is humble in the best sense: three main ingredients, patience, and a result far better than the sum of its parts.

Soaking the cornmeal

  1. Put the cornmeal in the heatproof bowl. Bring the milk, water and salt just to a boil in the saucepan over medium heat, watching closely because milk boils over quickly. Pour it over the cornmeal and stir well with the spatula.
  2. Cover the bowl and leave it at room temperature for 3 hours, or in the fridge overnight.

Toasting the Ribel

  1. Melt 2 pieces of the butter in the skillet over medium heat. Add the soaked cornmeal and spread it out. Cook for 5 minutes, turning and chopping it with the edge of the spatula every minute so it breaks into lumps.
  2. Turn the heat to medium low. Keep turning and breaking up the cornmeal every 1 to 2 minutes for 20 to 25 minutes, adding the remaining butter one piece at a time every 5 minutes as the pan looks dry. Let it sit undisturbed between stirs so it can brown.
  3. Taste a crumble and add a pinch more salt if needed. Spoon into warm bowls and sprinkle with the sugar if you like it the traditional breakfast way.

The apple compote

Method

  1. Put the apples, water, 2 tablespoons sugar, cinnamon stick and lemon juice in the second saucepan. Cover and cook over medium low heat for 12 to 15 minutes, stirring every few minutes.
  2. Remove the cinnamon stick. Taste and stir in the remaining sugar if the apples are sharp. Keep warm over the lowest heat, or let it cool if you prefer it cold.
